Avocado Salad

A five-minute salad where every ingredient counts. Start with avocados that are perfectly ripe, then let a good soy sauce, bright rice vinegar and toasted sesame oil do the rest, finished with a little chili and crisp nori.

Ingredients

Method

  1. Cut each avocado in half and take out the pit.
  2. Cut every half lengthwise once more, then cut across twice so each half gives you six big chunks.
  3. Put the chunks in a bowl and season with the salt.
  4. In another bowl, stir the rice vinegar and soy sauce together, then whisk in the sesame oil.
  5. Spoon some of this dressing over the avocado and dust with shichimi togarashi.
  6. Toss lightly, taste, and add more dressing or seasoning if you like.
  7. Plate it and crumble the nori over the top by hand.
